.... where is the curvature in the doors / rocker panels I've heard mentioned here? My excuse is that my rockers have been replaced as well as my door skins ( skins before I got the car,) Rockers came from TRF, skins have old VB part numbers/tags. My car is a 57 TS19909LO
 
If you put a straight edge to your door from front to back, you will see a slight curve.
 
Well, if its a dumb question I'm in the same boat as you. On my TS45000 ish car the doors do have a slight curve, but the outer sills do not so I need to make some adjustments. There is a vendor in Australia who is selling sills with curvature, but for later post 60K bodies. His earlier sills are flat. He thinks that was original - I suspect he's wrong.

I've asked around and haven't heard definitely if doors were ever flat - but I've come to my own conclusion that the main issue is having a good door/sill matchup regardless of curvature. If you have no mismatch there, though, don't worry about it I think.
 
Here is a picture of a right and left door lying on the driveway and next to each is a replacement (flat) outer rocker panel. As you can see, the center of the door is slightly higher than the rocker, and both ends are flush (or slightly recessed) with it. There is not much of a curve to the door. I have two sets of pre-60k doors, and they seem to be curved about the same. The original rocker is filler, so I can't say if it was flat or curved to match.

I am just going to put a little skim coat of filler there if I find that the curvature is noticeable.
